1 lb chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tsp sriracha (adjust for spice preference)

1 tsp honey

1 tsp lime juice

Instructions
 

Marinate the Chicken: In a bowl, add the chicken pieces and pour the buttermilk over them. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge) to tenderize and flavor the chicken.

    Prepare the Coating: In a separate large bowl, combine the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure even distribution of the spices.

      Heat the Oil: In a deep skillet or fryer, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of batter into it; if it sizzles and rises, it's ready.

        Coat the Chicken: Remove the marinated chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing firmly to ensure a good coating. Shake off any excess flour.

          Fry the Chicken: Fry the coated chicken pieces in batches to avoid overcrowding the pan, cooking for about 5-7 minutes until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust the seasoning to your taste, adding more sriracha for heat if desired.

              Serve: Toss the crispy chicken in the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped green onions or sesame seeds if desired.
