Crispy Bang Bang Chicken

1 pound chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Vegetable oil (for frying)

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon honey

1 teaspoon rice vinegar

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk. Cover and refrigerate for at least 1 hour or up to overnight for maximum flavor.

    Prepare the Coating: In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and pepper. In another dish, add the panko breadcrumbs.

      Coat the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it's fully coated, then dip it back into the buttermilk, and finally press each piece into the panko breadcrumbs until evenly coated.

        Heat the Oil: In a large skillet, heat vegetable oil over medium-high heat. You want enough oil to cover the bottom of the pan, about 0.5 inches deep.

          Fry the Chicken: Once the oil is hot (test by dropping a small piece of bread; it should sizzle immediately), carefully add the chicken pieces in batches. Fry until golden brown and crispy, about 4-5 minutes per side. Remove and let drain on paper towels.

            Prepare the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Adjust the seasoning and spice levels to taste.

              Serve: In a large serving bowl, toss the crispy chicken pieces in the Bang Bang sauce until well coated. Serve immediately, garnished with chopped green onions or sesame seeds if desired.
