Ingredients

2 medium zucchinis

1 tablespoon olive oil

1 teaspoon sea salt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika (optional)

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional for added flavor)

Cooking spray or additional olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 225°F (about 110°C). This low temperature will help ensure the chips will crisp up without burning.

Prepare the Zucchini: Wash and dry the zucchinis. Slice them into thin rounds, about 1/8 inch thick. For a more uniform thickness, consider using a mandoline slicer.

Season the Zucchini: In a large mixing bowl, combine the olive oil, sea salt, garlic powder, onion powder, smoked paprika (if using), and black pepper. Toss the zucchini rounds in the mixture until they are evenly coated.

Arrange on Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray. Spread the zucchini slices in a single layer on the baking sheet, ensuring they are not overlapping to promote even baking.

Add Cheese (Optional): If you’re using Parmesan cheese, sprinkle it over the zucchini slices before baking for an extra layer of flavor.

Bake: Place the baking sheet in the preheated oven and bake for 1.5 to 2 hours, flipping the chips halfway through. Keep a close eye on them towards the end of the baking time to prevent burning. They should be golden brown and crispy.

Cool Down: Once done, remove the baking sheet from the oven and let the chips cool for a few minutes. They will continue to crisp up as they cool.

Serve: Enjoy your crispy baked zucchini chips as a healthy snack or serve them with your favorite dip!
