3 cups mixed greens (arugula, spinach, and baby kale)

1 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

1/2 cup radishes, thinly sliced

1 avocado, diced

1/4 cup crumbled feta cheese

1/4 cup toasted sunflower seeds

1/4 cup fresh herbs (basil, mint, or cilantro), chopped

Juice of 1 lemon

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

Instructions
 

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, radishes, and avocado.

    Add the crumbled feta cheese and toasted sunflower seeds to the bowl, gently tossing to distribute the ingredients evenly.

      In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.

        Drizzle the dressing over the salad and toss gently until everything is coated.

          Finally, sprinkle the fresh herbs over the top and give the salad one last light toss.

            Serve immediately, garnished with a few extra sunflower seeds and herbs if desired.
