Ingredients

12 oz penne pasta

2 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 can (14 oz) crushed tomatoes

1/2 cup vodka

1 cup heavy cream

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook until soft and translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Add Tomatoes and Vodka: Pour in the crushed tomatoes and vodka, stirring to combine. Let the mixture simmer for about 5-7 minutes to allow the alcohol to cook off and flavors to meld.

Make it Creamy: Lower the heat and add the heavy cream. Mix well until the sauce is smooth. Stir in the red pepper flakes, and season with salt and black pepper to taste.

Combine Pasta and Sauce: Add the cooked penne to the sauce, tossing to coat the pasta evenly with the creamy vodka sauce. If the sauce is too thick, you can add a splash of pasta water to loosen it.

Finish with Cheese: Stir in the grated Parmesan cheese until melted and incorporated. Taste and adjust seasoning if necessary.

Serve: Serve the pasta hot, garnished with fresh basil and extra Parmesan cheese on top.
