Creamy Tuscan Gnocchi

Ingredients
  

1 lb (450g) potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Once they float to the top, about 2-3 minutes, drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the cherry tomatoes and cook until softened, about 3-4 minutes.

      Add Spinach: Stir in the fresh spinach and cook until wilted, approximately 2 minutes.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream. Stir well to combine. Gradually add the grated Parmesan cheese, stirring until the cheese has melted and the sauce is smooth.

          Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet, gently folding them into the creamy sauce. Sprinkle Italian seasoning, salt, and pepper to taste. Cook for an additional 2-3 minutes to heat through.

            Serve: Serve immediately, garnished with fresh basil and an extra sprinkle of Parmesan cheese, if desired.
