Creamy Tuscan Chicken Pasta

12 oz fettuccine or pasta of choice

2 tbsp olive oil

2 large chicken breasts, sliced into strips

Salt and pepper, to taste

3 cloves garlic, minced

1 cup sun-dried tomatoes, sliced

1 cup baby spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, boil salted water and cook the fettuccine according to the package instructions. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Season the sliced chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes or until golden brown and cooked through. Remove from the skillet and set aside.

      Create the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sun-dried tomatoes and cook for an additional 2 minutes.

        Combine Ingredients: Lower the heat and pour in the heavy cream, stirring well. Add the Parmesan cheese, Italian seasoning, and spinach. Stir until the spinach wilts and the sauce thickens, about 3-4 minutes.

          Mix with Pasta: Add the cooked pasta and chicken strips to the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency. Toss everything together to coat well.

            Serve: Plate the creamy Tuscan chicken pasta and garnish with fresh basil leaves. Optionally, sprinkle with extra Parmesan cheese for an extra touch.
