2 cans (14 oz each) of diced tomatoes, preferably fire-roasted

1 cup of fresh basil leaves, packed

1 cup of heavy cream

1 medium onion, chopped

2 tablespoons of olive oil

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes until the onion is soft and translucent.

    Add Tomatoes: Pour in the diced tomatoes (with their juices) into the pot, stirring to combine with the onions. Simmer for 5 minutes to allow the flavors to meld together.

      Blend the Soup: Remove the pot from heat and add the fresh basil leaves. Using an immersion blender (or carefully transferring to a blender), blend the mixture until smooth. If you prefer some texture, blend just until partially smooth.

        Stir in the Cream: Return the soup to low heat and stir in the heavy cream. Allow the soup to heat through without boiling, stirring occasionally for about 5 minutes. Taste and adjust seasoning if necessary.
