Creamy Sun-Dried Tomato Orzo

1 cup orzo pasta

1 tablespoon olive oil

2 cloves garlic, minced

1 cup sun-dried tomatoes, packed in oil, drained and chopped

4 cups vegetable broth

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves for garnish

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté Garlic and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped sun-dried tomatoes, cooking for an additional 2-3 minutes.

      Create the Sauce: Pour in the vegetable broth and bring to a simmer. Once simmering, stir in the heavy cream, followed by the dried basil and oregano. Season with salt and pepper to taste.

        Add Spinach and Orzo: Stir in the chopped spinach and let it wilt in the sauce for about 2 minutes. Next, add the cooked orzo, stirring well to ensure every bit is coated in the creamy sauce.

          Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and incorporated. Adjust seasoning if needed.
