2 cups pasta of your choice (fettuccine or penne works well)

1 lb chicken breast, cut into bite-sized pieces

1 cup sun-dried tomatoes, chopped (preferably in oil, drained)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup spinach leaves (fresh or frozen)

3 cloves garlic, minced

1 small onion, finely chopped

3 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until fragrant. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes until the chicken is browned and cooked through.

      Add Sun-Dried Tomatoes: Stir in the sun-dried tomatoes and cook for another 2 minutes to combine the flavors.

        Create the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring gently. Add the grated Parmesan cheese gradually, continuously stirring until the cheese has melted and the sauce is creamy. If the sauce is too thick, stir in some reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.

          Incorporate Spinach: Add the spinach leaves and let them wilt in the warm sauce for about 1-2 minutes.

            Combine with Pasta: Toss the cooked pasta into the skillet with the creamy chicken and sun-dried tomato sauce. Mix well to ensure the pasta is fully coated.

              Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves if desired.
