Ingredients

1 lb fresh shrimp, peeled and deveined

4 strips of bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

2 medium potatoes, diced

2 cups corn kernels (fresh, frozen, or canned)

4 cups seafood or chicken broth

1 cup heavy cream

1 cup milk

2 tablespoons all-purpose flour

1 teaspoon Old Bay seasoning

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1 teaspoon hot sauce (for a spicy kick)

Instructions

Cook the Bacon: In a large pot over medium heat, add the diced bacon. Cook until crispy, then remove with a slotted spoon and set aside, leaving the rendered fat in the pot.

Sauté the Aromatics: Add the chopped onion to the pot and sauté for about 5 minutes, or until translucent. Stir in the minced garlic and cook for another minute until fragrant.

Add Potatoes and Corn: Toss in the diced potatoes and corn, stirring to combine. Sauté for an additional 2-3 minutes.

Incorporate Broth: Pour in the seafood or chicken broth, and bring the mixture to a boil. Reduce heat to a simmer and let cook for about 10-15 minutes, or until the potatoes are tender.

Thicken the Chowder: In a small bowl, whisk together the heavy cream, milk, and flour until smooth. Gradually add this mixture to the pot, stirring constantly to prevent lumps. Simmer for another 5 minutes until the chowder thickens.

Add Shrimp and Seasoning: Add the shrimp to the pot along with Old Bay seasoning, salt, and pepper to taste. Cook for an additional 3-5 minutes, or until shrimp are pink and opaque.

Finish and Serve: Stir the crispy bacon back into the chowder. Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley and a dash of hot sauce if desired.
