Ingredients

8 ounces elbow macaroni or shell pasta

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

1 cup beef broth

1 cup heavy cream

1 cup shredded cheddar cheese (plus extra for topping)

1 teaspoon taco seasoning (optional)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook, breaking it apart, until it is browned and cooked through (about 5-7 minutes). Drain excess fat if necessary.

Add Aromatics: To the skillet with the cooked beef, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.

Combine & Simmer: Stir in the can of Rotel (with juice), beef broth, heavy cream, and taco seasoning, if using. Bring the mixture to a simmer, allowing it to cook for about 5-7 minutes until it thickens slightly. Stir occasionally.

Cheesy Goodness: Reduce the heat to low, and gradually add the cheddar cheese, stirring continuously until the cheese melts and the sauce becomes creamy. Season with salt and pepper to taste.

Mix in Pasta: Add the cooked pasta to the cheese sauce, stirring until the pasta is fully coated and heated through.

Serve: Spoon the creamy Rotel beef pasta into bowls, and top with additional shredded cheese and fresh cilantro or parsley if desired.

Enjoy: Serve warm and enjoy this comforting, creamy dish!
