Ingredients
  

1 pound ground beef

1 onion, diced

2 cloves garlic, minced

1 can (10 oz) Rotel diced tomatoes with green chilies

8 oz cream cheese, softened

1 cup beef broth

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

12 oz pasta (penne or rotini works well)

1 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Brown the Beef: In the same pot, return it to medium heat and add the ground beef. Cook until browned, about 5-7 minutes. Drain any excess fat.

      Sauté Aromatics: Add the diced onion and minced garlic to the beef. Cook until the onion becomes translucent, about 3-4 minutes.

        Add Rotel and Spices: Stir in the can of Rotel tomatoes, smoked paprika, Italian seasoning, salt, and pepper. Allow the mixture to simmer for about 5 minutes.

          Creamy Base: Lower the heat and add the softened cream cheese and beef broth. Stir until the cream cheese is fully melted and the mixture is creamy.

            Combine Pasta: Add the drained pasta to the pot and mix well. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

              Cheese it Up: Stir in the shredded cheddar cheese until melted and evenly distributed throughout the pasta.

                Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
