1 pound fresh gnocchi

1 head of garlic

2 cups cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Fresh basil leaves for garnish

Optional: Crushed red pepper flakes for a spicy kick

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in foil. Roast for 30-35 minutes until soft and caramelized. Allow to cool slightly and squeeze out the cloves into a bowl, discarding the skins.

    Prepare the Tomatoes: In a baking dish, toss the halved cherry tomatoes with the remaining tablespoon of olive oil, salt, and pepper. Roast in the oven alongside the garlic for 20 minutes until they burst and caramelize.

      Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface (fresh gnocchi usually takes 2-4 minutes). Drain and set aside.

        Make the Creamy Sauce: In a large skillet over medium heat, combine the roasted garlic, heavy cream, and dried Italian herbs. Use a whisk to mix in the roasted garlic until smooth. Bring the mixture to a gentle simmer, then stir in the grated Parmesan cheese until melted and creamy.
