8 oz fettuccine or pasta of choice

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 cups fresh spinach

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup chicken broth (low-sodium)

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

      Add Chicken and Spinach: Stir in the cooked shredded chicken and fresh spinach. Cook for about 2-3 minutes until the spinach is wilted and the chicken is warmed through.

        Incorporate Ricotta: Lower the heat and add the ricotta cheese, Parmesan cheese, and chicken broth. Stir to combine until smooth. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.
