2 cups mashed potatoes (preferably cooled)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup all-purpose flour

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (panko preferred for crunchiness)

Oil for frying (vegetable or sunflower)

In a large mixing bowl, combine the cooled mashed potatoes, cheddar cheese, cream cheese, flour, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined and smooth.

    Using your hands, take small portions of the potato mixture and form them into small puffs or balls, about the size of a golf ball.

      Roll each potato puff in the breadcrumbs until fully coated. This will give it a crunchy texture when fried.

        In a deep skillet or frying pan, heat oil over medium heat until hot but not smoking, about 350°F (175°C).

          Carefully place the potato puffs in the hot oil, ensuring not to overcrowd the pan. Fry until they turn golden brown and crispy, about 3-4 minutes per side.

            Remove the puffs from the oil and place them on a paper towel-lined plate to drain excess oil.
