Ingredients

1 lb ground beef

4 medium russet potatoes, peeled and diced

1 cup carrots, diced

1 cup celery, diced

1 medium onion, chopped

4 cloves garlic, minced

4 cups beef broth

1 cup milk

1 cup heavy cream

2 tsp Worcestershire sauce

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.

In a large crockpot, add the diced potatoes, carrots, celery, onion, garlic, cooked ground beef, and beef broth. Stir to combine.

Add the Worcestershire sauce, dried thyme, paprika, and season with salt and pepper.

Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender.

Once the cooking time is up, stir in the milk and heavy cream. Let it warm through on low for about 15 minutes.

Gradually stir in the shredded cheddar cheese until melted and incorporated into the soup.

Taste and adjust seasoning if necessary.

Serve hot, garnished with chopped parsley and enjoy your creamy creation!
