Creamy Pesto Chicken Pasta

12 oz (about 340g) pasta (fusilli, penne, or your choice)

2 tablespoons olive oil

1 lb (450g) chicken breast, diced

Salt and pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1 cup homemade or store-bought pesto

½ cup grated Parmesan cheese

½ cup cherry tomatoes, halved

Fresh basil leaves, for garnish

Optional: Red pepper flakes, for some heat

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook for 6-7 minutes, or until golden brown and cooked through.

      Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant but not burnt.

        Create the Sauce: Reduce the heat to low, then pour in the heavy cream. Stir to combine with the chicken. Allow the mixture to simmer for about 2-3 minutes.

          Mix in Pesto: Add the pesto and grated Parmesan cheese to the skillet, stirring until well combined. If the sauce is too thick, gradually add in the reserved pasta water until you reach your desired consistency.
