Creamy Pesto Chicken and Broccoli Pasta Bake

Ingredients
  

8 ounces pasta (penne or rotini)

2 cups cooked chicken, shredded

2 cups fresh broccoli florets

1 cup pesto sauce (store-bought or homemade)

1 cup cream (heavy or half-and-half)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried Italian seasoning

Salt and pepper to taste

1/4 cup pine nuts (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. During the last 2-3 minutes of cooking, add the broccoli florets. Drain the pasta and broccoli, then return them to the pot.

      Prepare the Sauce: In a medium bowl, whisk together the pesto, cream, garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Combine Ingredients: Add the shredded chicken and the pesto mixture to the pot with the pasta and broccoli. Stir until everything is evenly coated.

          Assemble the Bake: Pour half of the pasta mixture into a greased 9x13 inch baking dish. Sprinkle half of the mozzarella and Parmesan cheese on top. Add the remaining pasta mixture and top with the remaining cheeses. If you’re using pine nuts, sprinkle them on top as well.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

              Serve: Once done, allow the dish to cool for a few minutes. Garnish with fresh basil leaves if desired, and serve warm.
