Ingredients
  

2 cups cooked rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup bell peppers (mixed colors), diced

1 cup sweet corn, drained (canned or frozen)

1/2 cup black olives, sliced

1 cup Greek yogurt

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 garlic clove, minced

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Start by cooking the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool. Set aside.

    In a large bowl, combine the cooked rotini pasta, cherry tomatoes, cucumber, red onion, bell peppers, sweet corn, and black olives.

      In a separate bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, minced garlic, salt, and pepper until smooth and creamy.

        Pour the creamy dressing over the pasta and vegetables. Gently toss until all the ingredients are well-coated.

          Taste and adjust seasoning with additional salt and pepper if needed.

            Refrigerate for at least 30 minutes to allow the flavors to meld.

              Before serving, give the salad a good stir and garnish with fresh parsley.
