Creamy Pasta Salad

12 oz (340g) pasta (such as fusilli or rotini)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell pepper, diced (any color)

1/2 cup red onion, thinly sliced

1 cup frozen peas, thawed

1/2 cup black olives, sliced

1/4 cup fresh parsley, finely chopped

1/4 cup fresh basil, finely chopped

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and black pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooling, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, thawed peas, black olives, parsley, and basil.

      Make the Dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper. Adjust seasoning according to your taste.

        Combine Ingredients: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta and gently toss everything together until well coated.

          Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, taste and adjust seasoning if necessary.
