Ingredients
  

12 oz cheese tortellini

1 tbsp olive oil

1 medium onion, diced

3 garlic cloves, minced

8 oz cremini or button mushrooms, sliced

4 cups vegetable or chicken broth

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another 1 minute until fragrant.

    Cook Mushrooms: Add the sliced mushrooms to the pot and cook for approximately 5-7 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.

      Combine Broth: Pour in the vegetable or chicken broth and bring the mixture to a boil. Once boiling, lower the heat to medium-low.

        Add Tortellini: Stir in the cheese tortellini and Italian seasoning. Let it cook according to package instructions, usually around 5-7 minutes, until the tortellini is al dente.

          Mix in Spinach and Cream: Add the chopped spinach to the pot and stir until wilted. Then, pour in the heavy cream and stir well to combine.

            Incorporate Parmesan: Gradually add the grated Parmesan cheese, stirring continuously until melted and creamy. Season the soup with salt and pepper to taste.

              Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy hot!
