1 lb Italian sausage (mild or spicy, based on your preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 can (14.5 oz) diced tomatoes (with juice)

2 cups fresh spinach (or kale)

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

2 tbsp olive oil

Crusty bread (for serving, optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion, carrots, and celery to the pot. Cook for another 4-5 minutes until the vegetables are tender. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.

      Add Liquids: Pour in the chicken broth and add the can of diced tomatoes (with juice). Stir in the oregano and basil, and season with salt and pepper to taste. Bring the mixture to a simmer.

        Make it Creamy: Reduce the heat to low and add the heavy cream and grated Parmesan cheese. Stir until the cheese is melted and everything is well combined. Allow the soup to simmer gently for about 10 minutes, stirring occasionally.

          Add Greens: Stir in the fresh spinach (or kale) and cook for another 2-3 minutes until the greens are wilted and tender.

            Serve: Ladle the soup into bowls and garnish with additional Parmesan cheese if desired. Serve hot with crusty bread for dipping.
