2 lbs Yukon Gold potatoes, peeled and diced

½ cup unsalted butter, softened

1 cup heavy cream (or whole milk for a lighter option)

4 cloves garlic, minced

Prepare the Potatoes: Place the peeled and diced Yukon Gold potatoes in a large pot. Add enough cool water to cover the potatoes and sprinkle in a pinch of salt.
