Ingredients

1 medium head of cauliflower, chopped into florets

4 cloves of garlic, peeled

1/4 cup unsalted butter (you can use olive oil for a dairy-free version)

1/2 cup heavy cream (or unsweetened almond milk for a lighter version)

1/2 cup grated Parmesan cheese (optional for extra creaminess)

Salt and pepper to taste

Fresh chives or parsley, finely chopped for garnish

Instructions

Prepare the Cauliflower: Fill a large pot with water and bring it to a boil. Add the chopped cauliflower florets and garlic cloves. Cook them for about 10-12 minutes, or until the cauliflower is fork-tender.

Drain and Dry: Once cooked, drain the cauliflower and garlic in a colander. Allow it to sit for a couple of minutes to let off excess moisture. This step is crucial to ensure the mashed cauliflower won’t turn out watery.

Blend: In a food processor or blender, combine the drained cauliflower and garlic, unsalted butter, and heavy cream (or almond milk). Blend until smooth and creamy. Scrape down the sides as necessary.

Add Cheese: If using, add the grated Parmesan cheese to the mixture and blend again until well combined. Taste and season with salt and pepper according to your preference.

Serve: Spoon the creamy garlic mashed cauliflower into a serving bowl, and garnish with fresh chives or parsley for a pop of color and flavor.

Enjoy: Pair this delicious low-carb side dish with grilled meats, roasted vegetables, or your favorite healthy protein for a satisfying meal!
