Creamy Garlic Butter Tuscan Salmon

Ingredients
  

4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

½ cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Lemon wedges for serving

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: In a large skillet over medium-high heat, add the olive oil. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes or until golden brown and crispy. Flip and cook for an additional 3-4 minutes. Remove the salmon from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.

        Add Vegetables: Stir in the cherry tomatoes and cook for about 2 minutes until they start to soften. Add the baby spinach and cook until wilted.

          Create the Creamy Sauce: Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning. Cook for 3-4 minutes until the sauce thickens slightly. Add salt and pepper to taste.

            Combine: Return the salmon to the skillet, spooning the sauce over the fillets. Cook for an additional 2 minutes to warm the salmon through.
