4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup shredded sharp cheddar cheese (optional)

3 tablespoons butter or olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Chopped green onions or chives for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic, and cook for an additional 1-2 minutes until fragrant.

    Add the diced potatoes, vegetable broth, dried thyme, smoked paprika, and a generous pinch of salt and pepper to the pot. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes, or until the potatoes are tender.

      Once the potatoes are cooked, use an immersion blender to puree the soup to your desired creaminess. If you prefer a chunkier texture, leave some potato bits unblended.

        Stir in the heavy cream and shredded cheddar cheese (if using) until melted and fully incorporated. Adjust the seasoning with additional salt, pepper, or spices to taste.
