Ingredients
  

4 cups fresh or frozen corn kernels

1 medium onion, finely chopped

2 garlic cloves, minced

2 medium potatoes, peeled and diced

1 red bell pepper, diced

4 cups vegetable broth

1 cup heavy cream

1 teaspoon smoked paprika

1 teaspoon thyme (fresh or dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh chives or cilantro, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and red bell pepper. Sauté for about 5 minutes or until the onion is translucent. Stir in the minced garlic and cook for an additional minute.

    Cook the Potatoes: Add the diced potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes, or until the potatoes are tender.

      Add the Corn and Seasonings: Stir in the corn kernels, smoked paprika, thyme, salt, and pepper. Allow the chowder to simmer for another 5 minutes to let the flavors meld.

        Blend for Creaminess: Use an immersion blender to puree a portion of the chowder directly in the pot—this will create a creamy texture while leaving some whole corn and potato pieces for added texture. If you prefer a completely smooth chowder, blend until smooth.

          Finish with Cream: Stir in the heavy cream and let it heat through for 2-3 minutes on low heat. Taste and adjust seasoning if necessary.

            Serve: Ladle the chowder into bowls and garnish with freshly chopped chives or cilantro. Enjoy!
