Creamy Coconut Lime Chicken

1 lb (450g) boneless, skinless chicken thighs

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 can (13.5 oz) coconut milk

Juice and zest of 2 limes

1 tablespoon fish sauce (or soy sauce for a vegetarian option)

1 teaspoon ground ginger

1 teaspoon turmeric powder

1 teaspoon chili flakes (adjust for spice preference)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, and turmeric powder. Set aside for a few minutes while you prepare the other ingredients.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 5 minutes until translucent. Stir in the garlic, and cook for another minute until fragrant.

      Cook the Chicken: Increase the heat to medium-high, add the seasoned chicken thighs to the skillet, and brown them on both sides for about 5-7 minutes. They don’t need to be fully cooked through at this stage.

        Create the Sauce: Reduce the heat to medium-low, then pour in the coconut milk, lime juice, lime zest, fish sauce, ground ginger, and chili flakes. Stir everything together, making sure to scrape up any brown bits stuck to the bottom of the skillet for extra flavor.

          Simmer: Allow the mixture to come to a gentle simmer. Cover the skillet and let it cook for about 15-20 minutes, or until the chicken is cooked through and tender. Occasionally, stir gently to ensure nothing sticks to the bottom.

            Finish and Serve: Taste the sauce and adjust the seasoning if necessary. If you prefer a thicker sauce, let it simmer uncovered for an additional 5 minutes. Once ready, remove from heat and garnish with freshly chopped cilantro.
