1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon crushed red pepper flakes (adjust to taste)

4 cups chicken broth

2 cups half-and-half

1 lb potato gnocchi

2 cups fresh spinach, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for garnish

Instructions
 

Cook Chicken: In a large pot, add olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook for 5-7 minutes on each side until cooked through. Remove from pot and let cool, then shred into bite-sized pieces.

    Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until they begin to soften. Add minced garlic, thyme, parsley, and crushed red pepper flakes. Sauté for an additional minute until fragrant.

      Add Broth & Chicken: Pour in the chicken broth and bring to a simmer. Add the shredded chicken back to the pot and let it simmer for 10 minutes.

        Incorporate Gnocchi: Add the potato gnocchi to the pot and cook according to package instructions (usually about 2-3 minutes). Once the gnocchi float to the top, they're done.

          Make it Creamy: Reduce the heat to low and stir in half-and-half. Add chopped spinach and cook for another 2-3 minutes until the spinach wilts.

            Serve: Taste the soup and adjust seasoning with salt and pepper as needed. Ladle the soup into bowls, garnish with grated Parmesan cheese, and enjoy!
