1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

3 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon black pepper

6 cups chicken broth

1 package (16 oz) gnocchi

1 cup heavy cream

1 cup fresh spinach

Salt to taste

Fresh parsley, chopped for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the garlic, carrots, and celery. Cook for another 5 minutes, allowing the veggies to soften.

    Brown the Chicken: Add the diced chicken to the pot, along with the dried thyme, rosemary, and black pepper. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is browned on all sides.

      Add Broth: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to simmer. Allow it to cook for about 10-15 minutes to let the flavors meld.

        Cook the Gnocchi: Add the gnocchi to the simmering soup. They will float to the top when they are cooked (about 2-3 minutes).

          Make it Creamy: Stir in the heavy cream and fresh spinach. Let it simmer for another 2-3 minutes until the spinach wilts. Taste and adjust seasoning with salt if necessary.
