Creamy Cheesecake-Stuffed Chocolate Cookies

Ingredients
  

For the Cookie Dough:

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup chocolate chips (dark or semi-sweet)

For the Cheesecake Filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice (optional)

Instructions
 

Make the Cheesecake Filling:

    - In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

      - Add the powdered sugar, vanilla extract, and lemon juice (if using) and mix until fully combined.

        - Set aside in the refrigerator to firm up while you prepare the cookie dough.

          Prepare the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                - Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract.

                  - In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

                    - Gradually mix the dry ingredients into the wet mixture, being careful not to overmix. Fold in the chocolate chips.

                      Assemble the Cookies:

                        - Take a tablespoon of cookie dough and flatten it slightly in the palm of your hand.

                          - Place about a teaspoon of the cheesecake filling in the center and fold the cookie dough around it, sealing it well.

                            - Roll the filled dough into a ball and place it on the prepared baking sheet. Repeat with the remaining dough and filling, spacing the cookies about 2 inches apart.

                              Bake:

                                - Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. They will continue to firm up as they cool.

                                  - Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                                    Serve & Enjoy:

                                      - These cookies can be enjoyed warm or cooled, and they can be stored in an airtight container at room temperature for a few days.
