Creamy Cajun Shrimp Pasta with Sausage

12 oz fettuccine pasta

1 lb shrimp, peeled and deveined

8 oz smoked sausage, sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 cup heavy cream

1 cup chicken broth

2 teaspoons Cajun seasoning (or to taste)

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Add the sliced sausage and cook until browned, about 5 minutes. Remove sausage from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Season with salt and pepper. Remove the shrimp and set aside with the sausage.

        Make the Sauce: In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.

          Combine Ingredients: Pour in the chicken broth, scraping up any bits from the bottom of the skillet. Stir in the heavy cream, Cajun seasoning, paprika, and bring to a simmer. Allow it to reduce slightly for about 5-7 minutes.

            Add Vegetables and Cheese: Stir in the cherry tomatoes, spinach, and Parmesan cheese. Cook until the spinach is wilted and the sauce is creamy.

              Combine Pasta and Proteins: Add the cooked fettuccine, shrimp, and sausage back to the skillet. Toss everything together until well coated in the sauce. Adjust seasoning with salt and pepper as needed.

                Garnish and Serve: Serve the creamy Cajun shrimp pasta warm, garnished with chopped fresh parsley.
