12 oz fettuccine or penne pasta

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning (adjust to taste)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

1 cup heavy cream

1 cup chicken or vegetable broth

1 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

Salt and pepper to taste

Optional: crushed red pepper flakes for extra heat

Instructions
 

Cook the Pasta: Begin by cooking the fettuccine or penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Season the Shrimp: In a mixing bowl, toss the peeled and deveined shrimp with the Cajun seasoning. Ensure they are well-coated.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes, or until it becomes translucent. Stir in the minced garlic and chopped bell pepper, sautéing for an additional 2-3 minutes until fragrant.

        Cook the Shrimp: Push the vegetables to one side of the skillet and add the seasoned shrimp. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for another 2 minutes on the other side.

          Create the Creamy Sauce: Once the shrimp are cooked, pour in the chicken or vegetable broth and bring it to a simmer. Reduce the heat to low and carefully stir in the heavy cream. Allow the mixture to simmer for about 3-4 minutes until slightly thickened.

            Combine Everything: Slowly add the grated Parmesan cheese, stirring until melted and incorporated. If the sauce is too thick, use the reserved pasta water to reach your desired consistency.
