Ingredients

8 oz (225 g) pasta of your choice (fettuccine or penne work well)

2 cups broccoli florets

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon lemon zest

Salt and pepper to taste

Optional: red pepper flakes for a spicy kick

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Blanch the Broccoli: In the same pot, add the broccoli florets to the boiling water for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.

Prepare the Cream Sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

Combine Ingredients: Reduce the heat to low, then pour in the heavy cream. Stir in the lemon zest and bring to a gentle simmer. Gradually add the grated Parmesan cheese, stirring until smooth. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until desired consistency is reached.

Mix Pasta and Broccoli: Add the cooked pasta and broccoli to the skillet, tossing to coat everything evenly in the creamy sauce. Season with salt, pepper, and red pepper flakes if desired.

Serve: Remove from heat and serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
