Ingredients

1 lb ground beef

8 oz large pasta shells

1 medium onion, diced

3 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup sour cream

1 tsp paprika

1/2 tsp black pepper

1 tsp salt (or to taste)

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta shells and cook according to the package instructions until al dente. Drain and set aside.

Sauté Beef and Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Brown the Beef: Add the ground beef to the skillet. Cook until browned and fully cooked through, breaking it apart with a spatula as it cooks. Drain excess fat if necessary.

Make the Sauce: Lower the heat to medium-low. Pour in the beef broth, followed by the heavy cream. Stir well to combine. Add in the shredded cheddar cheese, sour cream, paprika, salt, and black pepper. Stir until the cheese is melted and the sauce is creamy.

Combine Pasta and Sauce: Gently fold in the cooked pasta shells until they are well-coated with the creamy sauce. If the mixture feels too thick, you can add a splash of beef broth to reach your desired consistency.

Serve: Remove from heat and let it cool slightly. Serve warm, garnished with freshly chopped parsley for a pop of color.
