Creamy Baked Mac and Cheese

2 cups elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cream cheese, cubed

4 cups whole milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes until bubbly and slightly golden.

        Add Milk: Gradually whisk in the whole milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.

          Add Cheeses: Lower the heat to medium-low and add the cream cheese, cheddar cheese, and mozzarella cheese. Stir gently until all the cheese has melted and the sauce is smooth.

            Season the Sauce: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Taste the sauce to adjust seasonings if necessary.

              Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Mix until the pasta is well-coated.

                Transfer to Baking Dish: Pour the mac and cheese into a greased 9x13 inch baking dish or similarly sized casserole dish.
