Creamy Bacon Pasta

8 oz (225 g) fettuccine or spaghetti

6 slices of thick-cut bacon, chopped

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup (240 ml) heavy cream

½ cup (50 g) grated Parmesan cheese

½ cup (120 ml) chicken broth

1 tsp black pepper

1 tsp salt (to taste)

¼ cup (15 g) fresh parsley, chopped (for garnish)

Optional: ½ cup (75 g) cherry tomatoes, halved

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine (or spaghetti) according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the skillet.

      Sauté Onions and Garlic: In the same skillet, add the chopped onion. Sauté for 3-4 minutes until soft and translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Cream Sauce: Pour in the chicken broth and bring to a simmer. Then, reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat the strands evenly with the sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Season and Finish: Stir in the cooked bacon and black pepper. Taste and adjust seasoning with salt if necessary. If using, gently fold in the halved cherry tomatoes for a pop of color and freshness.

              Serve: Divide the creamy bacon pasta into serving bowls, garnish with fresh parsley, and enjoy your delicious meal!
