Creamy Bacon Pasta

8 oz (225g) fettuccine pasta

4 oz (115g) bacon, chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach, chopped

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.

      Sauté Aromatics: In the same skillet, add olive oil if needed, and then add the chopped onion. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

        Make the Sauce: Reduce the heat to low, pour in the heavy cream, and stir well. Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

          Add Spinach and Bacon: Stir in the chopped spinach and cooked bacon, mixing until the spinach wilts down. Season with salt, pepper, and red pepper flakes if using.

            Combine with Pasta: Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly. If the sauce needs thinning, add more pasta water as necessary.

              Serve: Divide the creamy bacon pasta into bowls and garnish with fresh basil leaves if desired. Enjoy your meal!
