8 oz lasagna noodles, broken into pieces

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

1 pound ground Italian sausage (or any preferred ground meat)

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup whole milk

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

2 teaspoons Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Noodles: In a large pot, bring water to a boil and add the broken lasagna noodles. Cook according to package directions until al dente, drain, and set aside.

    Sauté the Aromatics: In the same pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.

      Brown the Meat: Add ground Italian sausage to the pot, breaking it apart with a spatula. Cook until browned and cooked through. Drain any excess fat if necessary.

        Build the Soup Base: Pour in the chicken or vegetable broth, followed by the cream and milk. Stir the mixture well to combine.

          Add Seasonings and Cheeses: Stir in ricotta cheese, 1 cup of mozzarella cheese, ½ cup Parmesan cheese, and Italian seasoning. Season with salt and pepper to taste. Bring the soup to a gentle simmer.

            Combine the Noodles: Add the cooked lasagna noodles to the soup, stirring to evenly distribute them throughout.

              Melt the Remaining Cheese: Reduce the heat to low, cover, and let the soup simmer for about 5-7 minutes until the noodles are heated through and the cheeses are melted.
