12 oz fettuccine or penne pasta

1 lb Cajun sausage (Andouille or any spicy sausage), sliced

2 tablespoons olive oil

1 medium onion, chopped

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or penne according to the package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned and heated through, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

      Cook the Vegetables: In the same skillet, add the chopped onion. Sauté for 2-3 minutes until it begins to soften. Add the sliced red and green bell peppers and cook for another 5 minutes until tender. Stir in the minced garlic and cook for an additional minute, until fragrant.

        Make the Alfredo Sauce: Reduce the heat to low. Pour in the heavy cream and stir well with the vegetables. Gradually sprinkle in the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is creamy.

          Season the Sauce: Add the Cajun seasoning, smoked paprika, salt, and pepper. Taste and adjust the seasoning if necessary.

            Combine Everything: Add the cooked pasta and the browned sausage back into the skillet. Toss everything together until the pasta is well-coated with the creamy sauce and heated through. If the sauce is too thick, add a splash of pasta cooking water to achieve the desired consistency.
