Crazy-Good Sausage Muffins with Cheddar

A delightful twist on a classic dish.

Ingredients
  

1 pound ground breakfast sausage (mild or spicy, your choice)

1 cup shredded sharp cheddar cheese

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buttermilk

2 large eggs

1/4 cup melted butter

1 tablespoon Dijon mustard (optional)

1/4 cup chopped green onions (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C. Grease or line a muffin tin with paper liners.

    Cook the sausage: In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it up into small pieces. Remove from heat and set aside to cool slightly.

      Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.

        Combine wet ingredients: In another bowl, whisk together the buttermilk, eggs, melted butter, and Dijon mustard (if using) until well combined.

          Combine mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix! Fold in the cooked sausage and shredded cheddar cheese.

            Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 of the way full.

              Bake: Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool and garnish: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Garnish with chopped green onions if desired.
