Cranberry Pecan Chicken Salad

Ingredients
  

2 cups cooked chicken, shredded or diced

1/2 cup dried cranberries

1/2 cup chopped pecans (toasted for extra flavor)

1 cup diced celery

1/2 cup diced red onion

1/2 cup mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (optional for garnish)

Leafy greens for serving (e.g., spinach, arugula, or mixed greens)

Instructions
 

In a large mixing bowl, combine the cooked chicken, dried cranberries, chopped pecans, diced celery, and diced red onion.

    In a separate smaller bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, apple cider vinegar, salt, and pepper until smooth.

      Pour the dressing over the chicken mixture and gently stir until everything is well combined and coated.

        Taste and adjust seasoning with additional salt and pepper, if necessary.

          If time permits, refrigerate the salad for at least 30 minutes to allow the flavors to meld together.

            When ready to serve, place a generous scoop of the chicken salad on a bed of leafy greens and garnish with fresh parsley, if using.
