For the cranberry filling:

2 cups fresh or frozen cranberries

1 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

For the crumble crust and topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 teaspoon vanilla extract

Instructions
 

Prepare the Filling: In a saucepan over medium heat, combine cranberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Stir gently and cook until the cranberries start to burst and the mixture thickens (about 5-7 minutes). Remove from heat and let cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan and line it with parchment paper, leaving some overhang for easy removal.

      Make the Crust: In a large mixing bowl, whisk together flour, oats, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla, then mix until the ingredients come together into a crumbly dough.

        Assemble the Bars:

          - Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the crust.

            - Spread the cranberry filling evenly over the crust.

              - Sprinkle the remaining crumble mixture on top of the cranberry layer.

                Bake: Place the pan in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and the filling is bubbly.

                  Cool and Cut: Remove from the oven and let the bars cool in the pan for at least 20 minutes. Use the parchment overhang to lift the bars out of the pan. Allow them to cool completely on a wire rack before cutting them into squares.
