For the Cake:

1 ¾ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk

2 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon vanilla extract

½ teaspoon salt

1 cup fresh or frozen cranberries, chopped

½ cup white chocolate chips

½ teaspoon cinnamon

For the Topping:

½ cup brown sugar, packed

½ cup all-purpose flour

¼ cup cold butter, cubed

½ teaspoon cinnamon

½ cup chopped pecans (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

¼ teaspoon vanilla extract

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Prepare Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

        Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined; do not overmix.

          Fold in Cranberries & White Chocolate: Gently fold in the chopped cranberries and white chocolate chips.

            Prepare Topping: In a small bowl, mix together brown sugar, flour, cinnamon, and pecans (if using). Add in the cold cubed butter and use a fork or your fingers to combine until the mixture resembles coarse crumbs.

              Assemble the Cake: Pour half of the batter into the prepared cake pan. Sprinkle half of the topping mixture over it. Pour the remaining batter on top and sprinkle with the remaining topping.

                Bake: Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

                  Prepare Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
