For the Cake:

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup sour cream

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh or frozen cranberries (if frozen, do not thaw)

For the Topping:

1/2 cup brown sugar, packed

1/2 cup rolled oats

1/4 cup chopped pecans or walnuts (optional)

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

For the Glaze:

1 cup powdered sugar

1-2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

    Prepare Cake Batter: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then add the sour cream and vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

        Mix Wet and Dry Ingredients: Gradually add the dry mixture to the wet batter, mixing just until combined. Gently fold in the cranberries.

          Pour Batter Into Pan: Spread the batter evenly into the prepared baking pan.

            Make Topping: In another bowl, combine the brown sugar, rolled oats, chopped nuts (if using), and cinnamon. Drizzle the melted butter over the mixture and stir until combined.

              Add Topping: Spoon the topping evenly over the cake batter.

                Bake: Place the baking pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                  Prepare the Glaze: While the cake is baking, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk if needed.
