1 lb lump crab meat, picked for shells

1 lb shrimp, peeled and deveined, chopped coarsely

1 cup cooked white rice (or 2 cups cooked quinoa for a twist)

1 cup shredded Monterey Jack cheese

1/2 cup grated Parmesan cheese

1 cup cream of mushroom soup (or homemade equivalent)

1/2 cup milk

1/2 cup chopped green onions

2 cloves garlic, minced

1/2 teaspoon Old Bay seasoning

1/4 teaspoon cayenne pepper (adjust for spice preference)

1 cup breadcrumbs (panko preferred for crunch)

2 tablespoons butter, melted

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Seafood Mixture: In a large mixing bowl, gently combine the crab meat, chopped shrimp, cooked rice or quinoa, Monterey Jack cheese, and 1/4 cup of the Parmesan cheese. Be careful not to break up the crab meat too much.

      Make the Cream Sauce: In a separate bowl, mix together the cream of mushroom soup, milk, green onions, garlic, Old Bay seasoning, and cayenne pepper until well blended.

        Combine: Pour the cream mixture over the seafood mixture and gently fold everything together until thoroughly combined.

          Transfer to Casserole Dish: Lightly grease a 9x13-inch casserole dish. Pour the mixture into the dish, spreading it evenly.

            Prepare Breadcrumb Topping: In a small bowl, combine the breadcrumbs, remaining Parmesan cheese, and melted butter. Mix until breadcrumbs are evenly coated.

              Top the Casserole: Sprinkle the breadcrumb mixture evenly over the top of the casserole.

                Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.

                  Garnish and Serve: Once baked, remove it from the oven and let it cool for about 5 minutes. Garnish with fresh chopped parsley before serving.
