1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

2 stalks celery, diced

1 medium sweet potato, peeled and cubed

1 zucchini, diced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes with green chiles

4 cups vegetable broth

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon ground cumin

½ teaspoon dried oregano

1 bay leaf

1 cup frozen corn

2 cups kale, chopped

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add the Vegetables: Add the diced carrot, celery, sweet potato, zucchini, and red bell pepper to the pot. Sauté for 5-7 minutes, stirring occasionally until the vegetables start to soften.

      Incorporate the Spices: Sprinkle the smoked paprika, cayenne pepper, ground cumin, and dried oregano over the vegetables. Stir well to coat the vegetables with the spices and cook for another 2 minutes.

        Add Liquids: Pour in the can of diced tomatoes with green chiles, including the juices, and the vegetable broth. Add the bay leaf and bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low and let the soup simmer for about 20 minutes, or until the sweet potatoes are tender.

            Finish with Greens: Stir in the frozen corn and chopped kale. Cook for an additional 5 minutes until the kale is wilted and the corn is heated through.

              Season and Serve: Remove the bay leaf, and season the soup with salt and pepper to taste. Serve hot, garnished with fresh cilantro or parsley if desired.
