Country Breakfast Skillet

A delightful twist on a classic dish.

Ingredients
  

4 medium potatoes, diced

1 tablespoon olive oil

1 medium onion, chopped

1 bell pepper (any color), chopped

3 cloves garlic, minced

6 slices of bacon, chopped

4 large eggs

1 cup cherry tomatoes, halved

Salt and black pepper, to taste

1 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

Optional: shredded cheese (cheddar or mozzarella)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally until they are golden and crispy.

    While the potatoes are cooking, in another pan, cook the chopped bacon over medium heat until crispy. Remove and set aside on paper towels to drain.

      In the same skillet used for bacon, add the chopped onion and bell pepper. Sauté for about 5 minutes until they soften, then add the minced garlic and cook for an additional minute until fragrant.

        Stir the cooked potatoes, bacon, and cherry tomatoes into the skillet with the onions and peppers. Season with salt, black pepper, and smoked paprika. Mix well and cook for another 3-5 minutes until everything is heated through.

          Using the back of a spoon, create 4 small wells in the mixture. Crack an egg into each well and cover the skillet with a lid. Cook for about 5-7 minutes or until the egg whites are set but the yolks are still runny (or longer if you prefer firmer yolks).

            Remove from heat, garnish with fresh parsley, and sprinkle with cheese if desired. Serve hot and enjoy your hearty breakfast!
