Cottage Cheese Egg Bake

2 cups cottage cheese

6 large eggs

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (any color)

1/2 cup onions, finely chopped

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh herbs (like parsley or chives) for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with a little olive oil.

    In a skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, sautéing until the onions are translucent, about 5 minutes. Add the chopped spinach and cook for another 2-3 minutes, stirring frequently until wilted. Remove from heat and let cool slightly.

      In a large mixing bowl, whisk together the eggs until well beaten.

        Stir in the cottage cheese, garlic powder, Italian seasoning, salt, and pepper into the eggs. Mix well until combined.

          Gently fold in the sautéed vegetables and half of the shredded cheddar cheese into the egg mixture.

            Pour the mixture into the prepared baking dish and spread evenly.

              Top with the remaining cheddar cheese.

                Bake in the preheated oven for 30-35 minutes or until the eggs are set and the top is lightly golden.

                  Remove from the oven and let cool slightly before slicing. Garnish with fresh herbs for an added touch of flavor and presentation.
